José Pariente fermented in barrel has been made with grapes verdejo from old vines with quartzite floors.
The harvest is done manually in boxes of maximum 20 kilos, and a first examination of the grains in the same vineyard is made to later pass to another more exhaustive selection in the winery.
Ferment the broth in French oak barrels. The batonnage is then carried out for a period of six months during which the broth remains in contact with its lees.
Subsequently it is transferred to stainless steel tanks to remain six months more.
Finally, it is clarified, stabilized and bottled.
The sight is bright yellow, of tear lived and clean.
On the nose spicy aromas and ripe white fruits with souvenirs toasted wood and mineral touches.
In the mouth, tasty and elegant, with marked ointment, good acidity and powerful, long drink, very well balanced the combination of wood and fruit.
Ideal to accompany fish dishes in the oven, all kinds of seafood, also with white meat and excellent combination with Iberian ham.
